That did it, thanks for the help! My own client code was probably doing the same thing since I didn't specifically set the encoding.
I am using 0.15 (SVN rev 1228241) on Ubuntu 11.04. I also tried it using version 0.12 on Fedora 16 and it DID work without changing the spout code. It took a while to get the final spout/drain command line perfect to see the header match working. It might be good to add those lines I posted to either the docs or examples.
