I suspect that if in France Sunday is the seventh day of the week, it has something to do with the Bible (Genesis). Why this has not been taken up by other cultures is mysterious to me.

Anyway this is pure convention.

Au contraire. The book of Genesis says that God created the universe in 6 days and the 7th day He rested, And the 7th day was Saturday, the Sabbath. Christians adopted Sunday as their holy day because that was the day of Christ's resurrection. See Matthew 28:1, or Mark 16:2, or Luke 24:1, or John 20:1
