Hi Joe and list members: Probably speaking in ignorance, but putting aside multiseat-VS-singleseat(1kbd/1mouse) and the specifics related to xorg.conf particulars (including different layouts and options), I'd concur w/others here; i found the best success with nVidia devices ( using the proprietary nvidia driver and not nv).
Downloading and installing the drivers, kernmods etc.. is a breeze, there's no lack of SERP related to issues and most/many of them are solved. Just take care that 'nvidia-setup' doesnt mung up your hand-crafted xorg.conf For just 2 Screens, the process is simple enough: Extended (not twinview) and Dual layouts are easy enough for most all cases. But there are some exceptions. What kind of outputs do you want on your card? pure DVI/VGA ,HDMI , TV-out? I assume you intend 2xVGA, but different ports add complexity. I'm now dealing with DM's (all bad), WM sessions, getting XDMCP working, console(tty?.conf) launchers and all the myriad ways to start X including Xephyr|Xnest| But i have my video working right and all the xorg.conf layouts and exec calls working right. On the DVI output we have a DVI to VGA converter so we can connect two simple VGA monitors.
