How about putting this in as a cron job:

tar jcf /home/email.backup.tar.bz2 /home/vpopmail /var/qmail/control
/var/qmail/users 



You could also make an offsite backup


ERR=/var/log/backup/backup-err.log
BACKUP="/home/vpopmail /var/qmail/assign /var/qmail/users"
FTP_SERVER="some.server.com"
FTP_USER="ftp"
FTP_PASS="passwd"

/bin/tar -jclpf - $BACKUP 2>$ERR | ncftpput -c -u $FTP_USER -p $FTP_PASS
$FTP_SERVER backup.tar.gz


Or something like that.

But like the other guy said, Google is your friend.
