Tortoise SVN has a feature that lets you undo an add.  I believe the
steps are add a file, then BEFORE you actually commit the file, you
can undo the add - not seeing this in Versions.  Am I missing
something?

I guess it would normally be a pretty minor feature, but in Versions
it's kind of a big deal because if you add a folder, it seems to
automatically do a completely recursive add on the entire folder, and
there is no way to add just certain elements of the folder.  This is
not preferred :)

Another thing that could make this a non-issue would be to add the
ability to selectively commit changes; as it stands right now, when
you do a commit on a directory, it's going to grab everything and
there is nothing you can do to check/uncheck the list of modified
files you want to commit.
