Hi Joyce, I've skinned a few ducks. Basically I slit the bird along the breast up to the base of the beak. Cut around that then carefully peel the skin back. When you get to the wings try and peel the skin back along the wing to get the bulk of meat and cut the wings when you can get no further. Continue with the peeling until you reach the tail and cut. I use a craft knife as I have found it better for skinning for tying.
After skinning, sock the skin in mild detergent for a couple of hours to try and get the grease out. Rinse the soap out and dry with newspapers. Saw dust may also be worth a try. Lay flat and rub borax into the skin with extra around the wings. Replace this borax after a couple of days with fresh.
