I switched from a vest to a JW Outfitters chest pack last year. Wouldn't go back to a vest. Forces me to carry fewer flies, I was getting overloaded with flies I never used and never would have. Added a turtle back option this year for rain gear and lunch. I was afraid the chest pack would be in the way but it isn't. For water you might consider a "Safe Water Anywhere" filter bottle. Carry it empty to save weight, fill it up when needed. That way you have not only cold water but an endless supply. I've used one for a year now on many different streams with no problems.
