All this talk about carp and I was off list for the day.  Jimi's description
of
Kosher is correct and KR's recipe is pretty close to my Grandmother's.

She would always make her own Gefilte fish and her combo of Pike, Carp,
and whitefish was from heaven. Unfortunately it went to the grave with her.
 Have never had gefilte fish that comes to hers in flavor.

 My father-in-law not only made his own gefilte but his own horseradish as
well.
 He always made one very fresh, especially stung batch for the newcomer. It
was
sort of the family initiation to watch the latest arrival to family melt in
front of everyone.

Diane is an incredible cook and does make many of the traditional Jewish
(eastern European) dishes  Tzimmis (beef and potatoes stew or beef
and carrots stew) kasha and varniskeh's (groats onions and mushrooms
with bow ties ), praches (guttural ch)  (stuffed cabbage) and many, many
more,
but we buy our gefilte fish.

It is very traditional to serve at the Passover Seder and as such is a key
component in CRITICAL MATZOH MASS !!!  (LOL) Coming very soon.
There are a couple on the market that are very good.  My favorite is by
a company called ROKEACH and is a pike and whitefish combo.

In high school I worked in a Deli and we had whole carp, herring, chubs,
whitefish, etc either in the deli case or in the barrels in the back.  The
real killers
were "SCHMALTZ " herring.  These fish had an order that was
