SOUTHWEST KISH:. I take about 3 dozen eggs, (depends on how many people
I'm cooking for), crack them in a big pot, stir them, dice a bunch of
potatoes, brown a bunch of sausage, ( roll type), into soft crumbles,
take a big onion and dice it, garlic clove diced, several green chilis
diced and dump all this into the pot with the eggs. Then I add a drop
or two of Bart's Habanero sauce, a good sprinkling of "Dynamite" (my
and Jeff's secret seasoning). Then with a big spoon I start stirring and
keep on stirring until the eggs are good and scrambled like you'd do at
home. While the Kish is cooking I heat a bunch of flour tortillas, which
will be used to wrap the Kish in. Some prefer to eat it with a fork.
Most like it wrapped like a burrito. MAN, YOU TALK ABOUT GOOD EATING
!!!! Guaranteed to wake you up and stick to your ribs until lunchtime.
( Jeff, did I leave anything out? Never wrote the recipe down till
just now.)
Cheers !
