I'll admit - I cheat - I use a Lansky (
http://www.lansky.com/products/systems.html ) System to sharpen my
blades. I don't have to worry about angle - system clamps onto the
blade and then you put the guide in the angle you wish. The basic
set of hones (stones) will get you a sharp enough edge to take hair
off of your arm.

Any help is much appreciated. And this is very much fly fishing
related as on that occasion when you do keep a fish you need a sharp
knife to take care of things.
