Hi Andreas,

Viking does not generate contours lines.
I'm not aware about "server side".
The only I can do is giving the links I know (you certainly already know them):
http://wiki.openstreetmap.org/wiki/Contours
http://wiki.openstreetmap.org/wiki/HikingBikingMaps
An other possibility: give a look at kosmos, one of previous link says
it is able to handle contours.

Perhaps other people on this list will help you.
