The TV/Video ought to still work, though it'd be good to make sure. The DOS stuff probably wouldn't, though it may depend on what kind of it. I have a Performa 640CD DOS where the DOS card actually plugs into the 68040 CPU socket. If yours is like that, it won't work.
The 5200/5300/6200/6300 line were the road apples. They are in general to be avoided, though if there was something PPC you really needed/wanted to run, it would certainly work. Architecturally they're very similar to what you'd get if you had a PPC-upgraded 68k box. They were mainly criticized for being woefully underpowered and even a step backwards at the time, but they might still be an upgrade to a straight 68040 box depending on your software needs. The 5400/5500/6400/6500 were very different beasts. They are fully redesigned PPCs with PCI architecture and a much better performance. I have a 6500/300 in a closet somewhere that I ran very nicely for some time. It would be a huge upgrade to the 68040 Performas, but it would be a much different machine.
