Unbless (move the System file into the prefs folder will do it) and rename the 7.6.1 System Folder. Install 7.5 and then run the updates to 7.5.5. Installer for 7.5 and all the updaters you need are out there on the web.
If you decide you prefer 7.6.1 after all then unbless and rename the 7.5.5 and bless the 7.6.1 System Folder by dragging the System file somewhere else and then back into the System Folder.
