Actually you don't need to sign the check. I never      r have.

Hi, it can be done, but is a little tricky. When you take the picture of the
check, you should turn your phone sideways so it's in landscape. It seems to
fit the picture of the check easier. Also, make sure the check is laying
flat on a table and that you have enough light in the room. 
Remember to sign the back of the check before starting. With a little trial
and error you can get it done. I'm also totally blind, and have trouble at
times. And just like in your situation, I've also gotten help from a sighted
person who also had trouble. So, it's not just a blindness thing.
