I have had this happen as well. Sometimes, I will go into my contact information for that person and make sure their number is listed in the iPhone field, instead of the generic mobile number field. I also have this happen a lot when receiving group messages from work. Another possibility is the person you're exchanging messages with may not have iOS5. Since you say you've exchanged iMessages with her before, then this wouldn't make sense.
