Chris, I'm not sure if apps bought on the iPhone will only transfer to iTunes and the computer if you have a wired connection. That is the way that I do it because my understanding is that it is much faster transferring wired rather than wirelessly.
You can also transfer items from the iPhone to the computer within iTunes by placing focus on your device, opening a context menu, and selecting transfer purchases. I'm using iTunes 11.4 for Windows so I'm not sure the steps to get to Transfer Purchases if you're running the latest iTunes 12.x.
