It's not really something they can "fix", though. Siri has to stop listening at 
some point, and so it figures when you pause for a bit, you're done. If it 
didn't have this logic, it could keep listening forever. There are two things 
you can do:
* When Siri is listening and you need it to stop, such as with a lot of 
background noise, do a two-finger double tap.
* To be able to pause, just hold the Home Button down the entire time you're 
speaking. If you are holding it once Siri activates, it becomes sort of a push 
to talk button. Pause as long as you like, and Siri will wait until that button 
is released.

Note that the second item can be a source of frustration.. If you're holding 
the button down too long, when you release it, Siri could think you just issued 
a very short command. This is why Siri sometimes seems to stop listening almost 
immediately. It's a matter of practice to get the timing down right, but again, 
if long pauses are your problem, yo might find this feature quite helpful.

As to the phone keypad not appearing, could you explain that more? I haven't 
seen it happen yet here. If you leave the Phone app, of course the keypad will 
disappear, but there's a "tap to return to call" item in your Status Bar while 
you're in a call that will bring it back. Again, it would help to provide more 
details on just what the problem is.
