By default, all apps will back up to iCloud, as far as I know. The ones I turn off are the ones that save *all* of their content online anyway. Instapaper or Pocket, for instance, will pull all your articles, folders, and so on from the internet once you log in, so there's no sense backing them up. Same for Facebook, Messenger, Rooms, Twitter, Dice World, Skype, and others. Of course, I did all this back in the caveman days of early 2015, way back when I only had 5GB of iCloud space.
