Not to discount everything you said, but I wonder if the problem is with your headphones. The Apple headphones I had lasted me quite a few years, but you never know. I've had similar problems with my iPhone 4S and a set of Sony earbuds with iPhone controls. I think my headset that has just started to go bad, because I never get this problem without the headphones plugged in. A scenario you might want to consider before thinking that your iPhone is going nuts, or that electrical equipment is interfering with it.
