Hi Kelby,

I just did a bit of testing with both my Plantronics Edge and the wired Apple 
Earpods.
You can indeed turn off one channel either or both for speech and sounds. Using 
the Plantronics Edge which is a single earpiece this only makes it sound a bit 
quieter. Using the Earpods and turning off right for speech makes Voiceover 
only come through the left side of the Earpods and turning off left for sounds 
then puts all Voiceover sounds/clicks only on the right side.
I thought maybe this way you could then make a phone call where you had 
Voiceover on the left ear and the call on the right ear or listen to a book on 
your right ear and have Voiceover speaking on your left, but that is not so. As 
soon as you start a call Voiceover will remain on the left, but the call comes 
through both sides of the earpods and the same applies to playing an Audible 
book or music via the Music app.
I am not sure what the purpose of this setting is but maybe Jonathan or 
somebody else has it figured out, it seems rather useless to me at this point. 
Being able to separate Voiceover from a phone call would actually be useful I 
think as you could easier look something up on the phone while on a call.

No, this is a new feature in iOS 10. While you have a headset or bluetooth 
speaker connected, in the 'audio" section of the Voiceover settings there is 
one called "speech channels". The way it was described to me implies that you 
can de-select the channels from you speaker so that Voiceover will only speak 
through your phone.
