Hi, Even if you label their cell numbers in your contacts app as being an iPhone, that is not what the phone uses to determine if the recipient of your text has an iPhone. I believe someone on the list said something that the phone will just know based off of the telephone number.
It also depends on whether or not the person has turned on iMessage in the settings and whether or not they've setup their cell number to receive iMessages. I have a friend who has a iPhone and when I send him a message, it is a text message and not an iMessage. I found the easiest way to know is to, either compose a new message to the person, or if you have an existing conversation, open it, and when you double tap on the edit box at the bottom to type your message, VoiceOver will say whether it is a text message or iMessage.
