Hi Paul,

If you have an Apple Watch unpair it from your phone before you back up your 
phone. This will ensure that all watch data is backed up.

Then connect your phone to your computer and choose Transfer Purchases to make 
sure all your purchases are on your computer.

Now do an encrypted backup so you get your passwords, health data, and Homekit 
data if you use Homekit included in your backup. 

When you set up your new phone, choose to restore from iTunes. Connect your 
phone to your computer when prompted, and choose the most recent backup, which 
should be selected by default. That should do it.
