As you use more apps, memory will fragment, no matter how smart the underlying computer OS is. What you experienced is the advanced results of that fragmentation. Clearing the app switcher will greatly lessen it. Rebooting the iPhone, like rebooting any computer, will reset the memory pointers and start the process over. Windows is really bad about memory fragmentation. Apple is much better, so you do not need to reboot very often. However, all systems require occasional reboots, even if it is only once per year.
