I've found that Google has great documentation, and usually just by googling the question, I can get to the proper documentation in a few seconds.
For instance, by googling how to insert links in Google Sheets, I found a document that said it's not possible on IOS, but you can do it on the computer. Everything you mention is quite easy on the Mac. Actually the only one I've found to not be possible is to move rows or columns.
