I'm going to answer Jen's question first. The red heart suit can be found in 
the symbols category. It is emoji 1181 & can be found a few above the clock 
times emojis. Heart suit is used to represent close friendship or love between 
2 people. 

Jim, the hand gestures emojis are located in the Smileys & People category. The 
hand gestures start with number 127 thru 154. When you first use any of the 
hand gestures you will need to choose a skin tone before the emoji is added to 
your message to select a skin tone...Find the emoji you want to use. Tap on it. 
A list of skin tones will appear, going across not up & down, either to the 
left or right of the emoji you have selected, tap on the skin tone of your 
choice & it will be added to your message. 

I don't use dictation so I can't answer your question regarding using emojis 
when dictation.
