When you select text and choose to make it a note, it still comes up with
the highlights.
So, if you double tap on the button to the left of the select button that
says Headings, Bookmarks, and Highlights, and select highlights, all your
highlights and notes will be shown, or you can export the highlights, which
will include your notes.

Get the cursor at the beginning of the text you wish to select.
Double tap on that selection spot to the left of the play button.
Then, to select whole sentences, you need to swipe down with three
fingers.
It will say how many words were selected and probably read them back to
you if you pause.
Be careful not to touch anywhere else on the screen until you have
selected all you wish.
Then, do a single finger double tap and the dialog will pop up where copy
is an option. Other options are lookup, highlight, etc.
This is covered in the user manual but I hope that is enough to get you
going.
It can take a bit of trial and error until you get used to it.
I love it myself. It provides a great way to pull out particular
passages.
