It makes no sense that updating iTunes would have actually physically deleted your ringtones. In any case, always a good idea to have those backed up somewhere, but I bet they still there under Tones in the iTunes Media folder. Have you connected your phone and gone to the Tones section? There is no more Tones library as in previous versions of iTunes.
