Hello Rich, I am experiencing the same pronunciation problem in iOS 11.3 on all three phone that I tested including my 6 S, 7, and 8 Plus devices.
Mind you I removed and then reinstalled Samantha Enhanced TTS on all three phones but the results were the same. As I have stated on more than one occasion, I'm getting to the point where I'm almost afraid of updating, these days. I demonstrated that the Karen voice said it correctly, but Tom and the Siri Female did not. She tried it on her phone, and Samantha said it correctly. But, since she heard mine, she will report it to the engineers. I decided having someone hear it would be better than trying to explain it in writing. But, sending in written reports certainly could help. I just installed Samantha Enhanced and it does the strange new pronunciation which is about 5 or 6 syllables. So, for me, Samantha Enhanced, Tom Enhanced, and Siri Female all do this strange new combination of emodican and emogi sort of. But, being in the US if I switch to Australian Karen, it uses the old familiar two syllable word. This is so strange I may take the time later to call Apple Accessibility and have them listen to it and see what they say. I did the 3 finger quadruple tap to copy what it was saying and pasted it into a note to then try spelling it out letter by letter. It is spelled the same as before: e m o j i. It seems to be saying something like a combination of emodican and the old word emoji together. So, if you want to change its pronunciation, you could add it to the dictionary under VoiceOver, Speech, pronunciations. I substituted a g for the j so it says emogi, which is still slightly different, but only two syllables at least. I'd also write Apple Accessibility and tell them you want the old pronunciation back.
