Spot on. Download a song, album or playlist, then it will only be on that device. Cancelling your subscription means you will lose all that, unless you have purchased or ripped them from your own collection and uploaded them via iTunes Match. Adding to library simply makes it available on all devices signed into the same Apple Music subscription; it does not automatically download them to that device.
