If they did it right, they'd do it like the Amazon devices, where the
device sets up an ad-hoc network, the phone finds it, logs into it, and
does its thing. But with my luck, it's probably just as you say,
requiring sighted assistance to set up the Wi-Fi portion on the pot.

If the Wi-Fi model is like the Bluetooth model, you have to press one of the
buttons on the unit in order for it to become seen by the app. Also, there
are two apps, one of which is for the Bluetooth only and the other for the
Wi-Fi model only. So you want to make sure you have the correct app. I hope
they have a customer service number that you can call and order to get some
help to find out which button you might need to press in order to accomplish
the pairing.
