Anna, I too just got a new phone. When I spoke to my carrier they also said I 
would have to unpair from my old phone and then re-pair with the new one. My 
transfer from iCloud went flawlessly, proud of myself, so I erased the old 
phone after activating with my carrier with the new one. At that point I 
suddenly remembered my watch 4. [I was not wearing it as it was later at night 
when I did the transfer.) Anyway, the next morning I picked up my watch 
expecting a necessary search on how to handle the mess on it, but when I opened 
it up and put in my code it opened. I was ecstatic, and believe it or not 
everything is where I had it. I did not unpair, though I am assuming it 
unpaired when I deleted all settings on my phone as directed by my carrier. I 
am interested to know two things. If I didn't unpair it from the other phone is 
there danger in not doing so? I would need to set up my old phone again and 
don't want to. Since I did nothing and everything is where it was and working 
fine do I now need to re-pair with the new phone? I know these are probably 
stupid questions, but I want my watch paired with my new phone correctly.

got your new phone. If that's the case, you need to unpair it from your old 
phone, if you still have it, and then re-pair with the new one. The reason for 
unpairing if possible is that the old phone will back up your watch. When you 
pair with the new phone, you should be able to restore from that watch backup. 
If you no longer have the old phone, you'll need to erase the watch and then 
pair it with the new one
