Hi, Josh. Yes, the iPhone's touch screen is definitely sensitive to any kind of skin contact. I've done stuff inadvertently because of how sensitive the touch screen is. The screen sensitivity is a good thing sometimes, like when I need to cover it with said Ziploc bag because of not wanting to dirty it in the kitchen. But it's a PITA when you're wanting to pick it up and move it and your palm hovers over it and kicks you out of your book or music app when that's the last thing you needed.
