If you pair Airpods or another Bluetooth earpiece or headset with an Apple Watch all audio including Voiceover comes through the headset. As for checking time discretely, you can already do this by double tapping with 1 finger on your Apple Watch screen when the watch is locked, the time will be given in vibrations.
