Ok, so basically, jailbreaking is the process of freeing your iPhone from 
Apple’s walled garden. As you probably know, Apple is pretty strict about what 
they allow in to their app store. There are a lot of interesting apps or tweaks 
out there that can add even more functions to your device, but if Apple doesn’t 
want them in their store, then you can’t install them. And you can miss out on 
some pretty cool stuff. 

This used to be a lot more popular. Like I said, a lot of the cooler iOS 
features in the last few years started as jailbreak tweaks. Apple would never 
admit it, but it’s obvious where the inspiration came from. But, it’s a bit of 
a cat and mouse game. Hackers find a loop that lets them create a jailbreak, 
and Apple patches. They find another one, and it keeps going on that way. So, 
the process has gotten a bit harder as of late, and more time tends to pass 
between iOS releases and new ways to jailbreak.
The things you can do range from small things like icon changes to bigger ones 
like enabling mobile hot spot even if said feature isn’t enabled on your mobile 
plan. Also, you can change default system sounds, add a close all button in the 
app switcher. etc.
Hope this gives you a better idea. It may not be for everyone, but I find it to 
be interesting. Just the ability to push my phone to the limits, do things with 
it that go beyond what Apple wants you to be able to do, etc.
