Probably you will need to set it up as a new watch .. and then restore your apps from a ICloud backup.

I have deleted all 3rd party apps, I have no songs, pictures etc. I’ve deleted every app that Apple says I can delete from the native apps. I’m still the same amount short for the install. If I have even less than Apple provided on my watch, how I can I get to less than this long enough to install the update? I hate to completely erase the watch.
