In an edit field use rotor to go to edit and select all. Or, if you want just a portion of the text, you increase or decrease your selection by pinching with to fingers on screen in or out. It is a gesture I found a bit tricky. Vest to practice in VoiceOver practice mode. The increment of your selection depends on your rotor setting. In other words, if you have it set to words, touching screen with 2fingers and increasing the distance between them will select the word to the right of cursor. If the rotor was set to lines, the same gesture would select one line. Hope this gives ooh a starting point. After selecting, change rotor to edit and choose copy or cut.
