I have always had to go back and back into Software Update to get that percentage, a small inconvenience, but never enough of one for me to even bother trying to petition Apple to change this.

Once it finishes the download and starts preparing the update, I've never found a time, or even thought about the time as it varies depending on your phone processor. I just wait until it finishes or pops up a dialog where I have to hit Install; but if you do nothing, it just installs.
