Actually, you add people to the VIP mailbox in the Mail app and not in contacts. Make sure the VIP inbox is visible, if not go to the Mail app, tap on Edit and select it. Now if you have never used it you can tap on the VIP inbox and there will be an "Add" button, tap it and select a person you want to add. If you have already used it then swipe right once and tap on the "More Info" button next to the VIP inbox, you can manage your VIP contacts there.

What this will do is when you receive an email from them, it will send you an alert or notification stating that you have email.
