I just move all apps I don't really use to the last page of apps, for example, if you have apps and folders on 3 pages, just move all the stock apps you don't want to use onto the fourth page. Alternatively, you could create a folder and call it "Unused Apps" or something like that. That is not the same as completely hiding or deleting it, but I find it just as good.
