I know this works for the swimming workout, but I think it also works for other types, you can pause a workout by pressing the digital crown and side buttons together.

We both have the Apple Watch Ultra 2. So we leave the house and both start the “Outdoor Walk, open goal” in the driveway. I have Voiceover on, but my wife is sighted so she obviously does not need it. As we walk along and reach the 1 Km mark, Siri announces “1 Km” on my wife’s Apple Watch and I think the time might be mentioned, my watch is silent. This repeates for her each additional Kilometer. I have checked it by turning Voiceover off on my watch after I start the workout and then I also get the announcement. Once again, I find it incredibly annoying why Apple thinks that a blind person using Voiceover would not want to have this announcement. I don’t care if Siri announces it or if in our case Voiceover would announce it, but to simply not have it say anything is just silly.
