Seeing AI has a document detection option and you can take a picture for reading longer text, like mails, cooking instructions and so on.

To my understanding, that means that nothing is sent to outside servers, making it an excellent privacy choice. i would use live read to go over personal information such as, medical or financial stuff. Sullivan plus, Speakaboo, Be My eyes, Seeing aiAlly, Envision, I Can See, Help You See and Super Sense, to name those I've tried, all use outside servers to process.
