I believe the newer version of seeing AI allows you to add pages. I know for a fact that VDScan, which originally was Voice Dream Scanner does. I once scanned a 230 page book into one document. I think that is close to the maximum that can be done in one document, but you could always export the documents and combine them in word or whatever on a computer. It takes a lot of patience and willingness to edit later.
