Interesting, I'm using IMAP with Gmail on my iPhone, and only the last 50 messages are downloaded to my iPhone, and even then larger messages are truncated. I have messages in my in box going back to 2011 at the moment, although I'm working at getting those older messages either deleted or filed in various folders, but having those messages in my in box isn't keeping me from using email on my iPhone. Maybe the iPad is different, and tries to synch everything in your in box.
