The best results are when updating over WiFi, as some apps are too large to update over data.
Also, try updating one app at a time with the individual update button with each app. If you are syncing with a computer, you could update via iTunes, then sync the phone, but that doesn't solve why the phone is not completing the updates. If all else fails, then you may need to take it in to an Apple store if that is possible.
