I've only used and set up IMAP on my iPhone, but a Google search yielded up the following web site: https://discussions.apple.com/docs/DOC-4294
The bottom line is that the iPhone tries to figure your protocol out based on your email provider, but it may guess wrong or you may want POP, even if it supports IMAP, so the trick seems to be to enter a fake email address and then it'll prompt you for all of the pertinent information, including POP versus IMAP.
