Hi. This is how I do it as well. I can go create labels on the Gmail site. Then 
the next time I check mail from my phone or from Thunderbird the labels are 
seen as folders. So the all-male folder in my account has more than 15,000 
messages on it, however many of them are inside folders or labels as Google 
calls them. Whether I delete email from the iPhone or from Thunderbird, the 
message gets moved to the trash folder instead of the all-male folder. Then 
after 30 or 60 days, I forget which, the trash is emptied out. This way I don't 
have messages which are years old and no longer of any use to me.
