Yes, if you are using imap on a Mac computer, you can create new mailboxes 
using "new mailbox" in Apple mail. Create them in the gmail level instead of 
where your inboxes or On my Mac boxes are and they will show up as labels on 
the gmail site and additional boxes on your Apple computer and iOS devices. 
Then you can move files into them and organize. It isn't even necessary to go 
to the gmail website to create new labels.

Also, the gmail website does state that mail deleted on iOS devices will be 
archived but that this can be reversed by turning off archiving in Settings on 
your device. I would think this means they still hang around in trash for a 
period of time but should eventually delete. From what the website for gmail 
stated, it sounds like even if you double tap and hold the archive button to 
delete instead, emails will still be archived unless you turn archiving off. I 
could be wrong about this.

Apparently there are "select all" options in gmail on the website but at least 
in safari they don't appear to be accessible. I haven't tried it in Windows or 
in Firefox or google chrome on the Mac.

However, I'm still kind of puzzled as to why these emails would be causing a 
problem in using an iOS device. Once you move or delete or archive them or 
whatever, they shouldn't be in your inbox and they shouldn't be in any boxes 
you need to use a lot either unless you put them there. I have a Mac, an iPhone 
and an iPad and I don't have bunches of messages downloading by 50s from oldest 
to newest. For one thing I have my message numbers set higher than that in 
settings but for another it is my newest emails that show first in any box I am 
in. I realize it's not terribly helpful when you are having a problem to have 
somebody tell you he/she isn't having that problem but this should indicate 
that there is something that can be done about it without avoiding gmail on 
your iOS device or deleting all your emails from the website. If you are in 
abox with a lot of emails, you can do a search and at least in my experience 
you are then asked if you want to continue searching on the server rather than 
automatically presenting you with all emails. I'm sure I must be missing or 
misunderstanding what the problem is that is causing people so much 
frustration. Of course, as has already been mentioned, if you have a computer 
where you can use pop instead of imap you can make sure that your setting on 
the gmail site are set to download everything even if it has already been 
downloaded and to delete from server when downloaded or you maybe can set the 
"delete from server" part in your email client. Then downloading all your 
emails to your computer is one way to get rid of them all off the gmail site 
but be prepared for a lot of messages and to possibly having to download 
several times as the server may not send all the messages in one bunch or your 
computer's mail settings may be set to a limit. Still, I would think most 
people don't really want to eliminate all emails from the website.
I also seem to have missed out on who or what Clwyd is but I didn't want to 
arbitrarily delete it from the subject line.
