Which email app are you talking about? I'm not sure I've seen this option in the email client on the iPhone or in Thunderbird. Note I haven't really looked for it in Thunderbird, since I'm OK with Google managing the trash for me. I've also found that having the trash around for a few days can be useful. For example, if I'm not interested in a post to a mailing list at the time, I'll delete it, but if in subsequent posts I want to go back and check something out or answer someone's question, I can still retrieve the message from my trash folder. I don't have to bother anyone on the list, and this gets me around that annoying habit some people have of not including the thread they're replying to. I know I could search through the list archives, but searching through the Trash folder in Thunderbird can be so much easier.
