Please correct someone if I am wrong, but the all mail folder and for that 
matter all the  folders stay on gmail not on the phone.  Actually not folders 
but just titles but act like folders.

Google doesn't actually use folders. It uses flags. The all mail folder is the 
place where all your mail actually exists. Your best option is to leave all 
mail alone. Work in your folders.
