Regarding time zones, ask Siri the following: What is the time difference between New York and Sidney Australia.
You will get lots of information, but listen closely for UTC time offset in terms of hours. In this case +18. You can simply add the 18 to your starting time. That is, if you're interested in 3:45 PM New York to Sidney, simply add 18 hours which is 9:45 AM the next day. I also just tried asking the following: Convert 6PM Seattle Washington to Sidney Australia time. Siri gave me the time as well as the UTC offset +8 as I described above.
